Ingredients
Scale
Base and Topping
- One 13.29oz package Oreos (divided)
- 1 1/2 cups shredded coconut
- 2–3 drops green food coloring
- 8–10 Peeps bunnies
- 20–26 Cadbury mini eggs
Cream Mixture
- One 8-ounce package cream cheese, softened
- 1/2 stick unsalted butter, softened
- 1 cup powdered sugar
- One 16oz container Cool Whip
Pudding Mixture
- Two 3.9oz boxes instant chocolate pudding mix
- 3 cups cold milk
Instructions
- Crush Oreos: Place the Oreos in a large Ziploc bag and crush them thoroughly using a rolling pin or mallet until they resemble coarse dirt. Set aside 1 1/2 cups of the crushed Oreos for topping.
- Layer Crust: Evenly spread the remaining crushed Oreos over the bottom of a 9×13 inch baking dish to form the base crust layer.
- Prepare Cream Mixture: In a large mixing bowl, beat together the softened cream cheese and unsalted butter until smooth and creamy. Add the powdered sugar and mix until completely combined. Gently fold in the Cool Whip until well incorporated, forming a light, fluffy cream layer.
- Make Pudding: In a separate large bowl, whisk together the two boxes of instant chocolate pudding mix with 3 cups cold milk until smooth and thickened.
- Combine Cream and Pudding: Add the prepared pudding mixture to the cream cheese mixture and mix thoroughly until smooth and uniform in texture.
- Assemble Cake: Spread the combined creamy pudding mixture evenly over the Oreo crust layer in the baking dish. Sprinkle the reserved crushed Oreos evenly over the top to create the dirt surface. Refrigerate the cake for at least a few hours or overnight to allow it to set properly.
- Prepare Green Coconut Grass: Place the shredded coconut in a large Ziploc bag. Add 2-3 drops of green food coloring, seal the bag leaving some air inside, and shake vigorously until the coconut is evenly tinted green, resembling grass.
- Decorate and Serve: Before serving, remove the cake from the refrigerator and sprinkle the green shredded coconut on top. Arrange the Peeps bunnies and Cadbury mini eggs on the coconut to create a fun and festive Easter dirt garden display.
Notes
- To achieve fluffy, well-colored green coconut, leave some air inside the Ziploc bag before shaking so the coconut can move freely to distribute the food coloring evenly.
- Be sure to use instant pudding mix for this recipe as it requires no cooking, drastically reducing prep time.
- This dessert is best served chilled and can be made a day ahead.
