Crumble:
- 120 g all-purpose flour
- 200 g dark brown sugar
- 1 teaspoon ground cinnamon
- 85 g butter room temperature
Vanilla Cinnamon Cake:
- 340 g all-purpose flour
- ½ teaspoon ground cinnamon
- 2 ¼ teaspoon baking powder
- ½ teaspoon salt
- 125 g butter room temperature
- 225 g granulated sugar
- 3 eggs room temperature
- 225 g sour cream 14-18% room temperature
- 40 g vegetable oil
- 1 ½ teaspoon vanilla extract
Maple Glaze:
- 125 g powdered sugar
- 1 tablespoon maple syrup
- 1 teaspoon sour cream
- ½ teaspoon vanilla extract
- 1–2 teaspoon water
Instructions
- Prepare Cinnamon Apples: Toss diced apples with sugar and cinnamon. Set aside.
- Make Crumble: Mix flour, brown sugar, cinnamon, and butter until crumbly. Set aside.
- Prepare Cake: Combine flour, cinnamon, baking powder, and salt. Cream butter and sugar, add eggs, sour cream, oil, and vanilla. Mix dry ingredients and spread batter in pan.
- Assemble: Layer apples, crumble, and cake batter in a pan. Bake.
- Make Glaze: Whisk powdered sugar, maple syrup, sour cream, vanilla, and water. Drizzle over cooled cake.
