Description

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth

Vegetables and Seasonings:

  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 cup celery, diced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat oil: In a large pot, heat olive oil over medium heat.
  2. Sear beef: Add beef cubes and brown on all sides. Remove and set aside.
  3. Sauté aromatics: In the same pot, sauté onions and garlic until fragrant.
  4. Add remaining ingredients: Return beef to the pot, add broth, vegetables, tomato paste, herbs, and bay leaf. Season with salt and pepper.
  5. Simmer: Bring to a boil, then reduce heat and simmer until beef is tender and vegetables are cooked.
  6. Serve: Discard bay leaf, garnish with parsley, and serve hot.
