- 2 pounds beef chuck, cut into 1-inch cubes
- 3 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
Vegetables and Seasonings:
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup parsnips, diced
- 1 cup celery, diced
- 1 tablespoon tomato paste
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat oil: In a large pot, heat olive oil over medium heat.
- Sear beef: Add beef cubes and brown on all sides. Remove and set aside.
- Sauté aromatics: In the same pot, sauté onions and garlic until fragrant.
- Add remaining ingredients: Return beef to the pot, add broth, vegetables, tomato paste, herbs, and bay leaf. Season with salt and pepper.
- Simmer: Bring to a boil, then reduce heat and simmer until beef is tender and vegetables are cooked.
- Serve: Discard bay leaf, garnish with parsley, and serve hot.
