- 40 g (0.33 cups) Cheddar cheese – mature; grated
- 20 g (0.25 cups) Feta – crumbled
- Chives – to serve
Instructions
- Preheat Oven: Preheat the oven to 180°C (350°F).
- Prepare Ingredients: In a bowl, mix together whisked eggs, chopped spinach, halved cherry tomatoes, olives, spring onions, diced bell pepper, cheddar cheese, and feta.
- Assemble Tortilla: Place the flour tortilla in a baking dish and pour the egg mixture over it.
- Bake: Bake in the preheated oven for about 20-25 minutes or until the eggs are set and the top is golden.
