Instructions
- Prepare the phyllo sheets: Carefully unroll the phyllo pastry sheets and cover them with a damp kitchen towel to prevent drying out. Cut the sheets into squares that are large enough to wrap around the feta pieces, approximately 3×3 inches.
- Cut the feta cheese: Slice the feta into small bite-sized cubes, roughly 1 inch each, ensuring they will fit nicely inside the phyllo squares.
- Assemble the bites: Brush each phyllo square lightly with extra virgin olive oil. Place a cube of feta cheese in the center, then fold the phyllo edges over to enclose the cheese completely, forming a small parcel. Brush the outside of the parcel with more olive oil for crispiness.
- Place on baking tray: Arrange the prepared feta parcels on a baking sheet lined with parchment paper, spacing them evenly to allow even baking.
- Bake the bites: Preheat the oven to 375°F (190°C). Bake the feta bites for 15-20 minutes, or until the phyllo pastry is golden brown and crisp.
