Main Ingredients:

  • 4 large russet potatoes, equal to 2 lbs.
  • ¾ teaspoon salt
  • 6 slices thick cut bacon
  • 1 large yellow onion
  • 3 cloves garlic, minced
  • 2 Tablespoon butter
  • ¼ cup flour
  • 3 ½ cups Chicken broth
  • 2 cups half and half
  • ¾ cup sour cream
  • ½ teaspoon pepper
  • 2 cups shredded cheddar cheese
  • 1/8 cup chives, finely diced

Instructions

  1. Preheat: Preheat the oven to 400°F.
  2. Bake Potatoes: Prick potatoes with a fork, rub with oil and salt, bake for 1 hour.
  3. Cook Bacon: Cook bacon until crispy, crumble and set aside.
  4. Sauté: Sauté onions and garlic in butter until soft.
  5. Add Flour & Broth: Stir in flour, add broth slowly, and simmer.
  6. Add Ingredients: Add potatoes, half and half, sour cream, pepper, and cheese.
  7. Blend: Blend until smooth, season to taste.
