For the Topping:
- ¾ cup packed light brown sugar
- ½ cup self-rising flour
- ½ cup (1 stick) unsalted butter, softened to room temperature
- 1 cup uncooked old-fashioned oats
- ½ cup chopped pecans
For the Filling:
- 1 cup self-rising flour
- 1 cup sugar
- 1 cup milk
- 2 teaspoons banana extract (optional)
- ½ cup (1 stick) butter, melted
- 4 ripe bananas, sliced
Instructions
- Preheat oven and prepare dish: Preheat your oven to 375°F (190°C) and lightly spray a 2-quart or 9×9-inch baking dish with nonstick cooking spray to prevent sticking.
- Make the streusel topping: In a bowl, use a fork to combine the brown sugar, self-rising flour, and softened butter until mixture becomes crumbly. Stir in the old-fashioned oats and chopped pecans evenly. Set this topping mixture aside.
- Prepare the filling: In a medium mixing bowl, whisk together the self-rising flour, sugar, and milk just until combined. Add the melted butter and whisk again to fully incorporate. If desired, stir in banana extract here for enhanced banana flavor.
- Assemble the cobbler: Pour the filling mixture into the prepared baking dish, spreading evenly. Arrange the sliced ripe bananas over the top layer of the filling.
- Add streusel topping: Evenly crumble the prepared oat and pecan streusel topping over the banana layer, covering it completely.
- Bake the cobbler: Place the baking dish in the preheated oven and bake for 45 to 50 minutes, or until the top is golden brown and the filling is set without jiggle.
- Serve: Remove from oven and allow to cool slightly before serving. Optional: Serve warm with a scoop of vanilla ice cream and additional banana slices for extra indulgence.
Notes
- Originally, this recipe used a banana milk product which is no longer available; regular milk is a perfect substitute.
- The recipe also works well with banana protein drink as a milk substitute for added protein.
- For a stronger banana flavor, add about one teaspoon of banana extract to the milk before mixing.
