Description

Birds Nest Cookies are a delightful no-bake treat made by coating crunchy chow mein noodles in melted butterscotch and semi-sweet chocolate chips, then shaped into nests and filled with colorful candy eggs.   • 1 bag Semi-Sweet Chocolate Chips (approximately 11 oz)

  • 10 ounces Chow Mein Noodles
  • Chocolate Eggs – Cadbury Mini Eggs, M&M Eggs, Robin’s Eggs, or Jelly Beans (about 54 eggs, 3 eggs per cookie for 18 cookies)

Instructions

  1. Melt the Chips: In a large glass bowl, combine the butterscotch and semi-sweet chocolate chips. Melt the chips using either the microwave by heating in 30-second intervals and stirring until smooth, or use the Instant Pot method by placing the bowl over warm steam created from sautéing water in the Instant Pot, stirring until melted thoroughly.
  2. Coat the Noodles: Stir the chow mein noodles gently into the melted chocolate mixture ensuring each noodle is fully coated. Scrape the bowl bottom to incorporate all melted chocolate evenly.
  3. Form the Nests: Using large spoons, drop spoonfuls of the coated noodles onto a parchment paper or silicone mat lined baking sheet, shaping each mound into a nest. Create an indentation in the center for holding the eggs.
  4. Add the Candy Eggs: Place three candy eggs into the center of each nest-shaped cookie.
  5. Cool the Cookies: Allow the cookies to cool completely at room temperature until the chocolate sets firmly.
  6. Store Properly: Once cooled, store the birds nest cookies in a sealed container. They keep well for up to a week but are best enjoyed within 2 to 4 days for optimal freshness and texture.
