Instructions
- Prepare the Honey Bourbon-Glazed Bacon: In a skillet over medium heat, combine honey and bourbon to create the glaze. Add the bacon slices and cook, turning occasionally, until the bacon is crisp and well-coated in the sticky glaze, about 10-12 minutes. Remove bacon and drain on paper towels.
- Season and Scramble the Eggs: In a bowl, whisk eggs with garlic powder, thyme, smoked paprika, and basil until fully combined. Heat olive oil in a non-stick skillet over medium heat, then pour in the egg mixture. Gently stir and cook the eggs to your desired consistency, soft and creamy is recommended, about 4-5 minutes.
- Toast the Croissants: Slice croissants in half horizontally and toast them lightly either in a toaster oven or on a skillet until golden and slightly crisp.
- Assemble the Sandwiches: On the bottom halves of the toasted croissants, layer slices of glazed bacon, seasoned scrambled eggs, a slice of white cheddar cheese, and avocado slices. Add pickled onions and microgreens if using. Close with the top halves of the croissants.
