Instructions

  1. Prepare the Bubblegum Mint Simple Syrup: In a small saucepan, combine the bubble gum pieces, corn syrup, and fresh mint. Add a few drops of pink food coloring if desired to give the syrup a vibrant hue. Heat gently over low-medium heat, stirring occasionally until the gum dissolves and the mixture thickens slightly. Remove from heat and strain to remove solids. Allow the syrup to cool.
  2. Muddle Fresh Mint: In a cocktail shaker or sturdy glass, gently muddle a few fresh mint leaves to release their oils and aroma, but avoid shredding them.
  3. Combine Cocktail Ingredients: Add 3 ounces of the bubblegum mint infused simple syrup, 3 ounces of rum, and 3 ounces of fresh lime juice into the shaker with the muddled mint. Fill the shaker with ice and shake well to chill and mix flavors.
  4. Assemble the Mojito: Strain the mixture into a tall glass filled with fresh ice. Top off with 6 ounces of carbonated soda water, gently stirring to combine without losing the bubbles.
