Ingredients

Scale

Spiced Apple Filling

  • 2 cups (200g) finely diced, peeled firm tart apples
  • 2 tablespoons (30g) packed dark brown sugar
  • ¼ teaspoon ground cinnamon

Cookie Dough

  • ½ cup (113g) unsalted butter, softened
  • ½ cup (110g) packed dark brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg, at room temperature
  • 1 ⅓ cups (190g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Rich Salted Caramel Sauce

  • 1 recipe of Rich Salted Caramel Sauce (prepared as per your favorite recipe or instructions)

Instructions

  1. Prepare the Spiced Apple Filling: In a bowl, combine the finely diced peeled tart apples with dark brown sugar and ground cinnamon. Mix well to evenly coat the apple pieces with sugar and spice. Set aside to allow the flavors to meld.
  2. Make the Cookie Dough: In a large mixing bowl, cream together the softened unsalted butter, dark brown sugar, and granulated sugar until light and fluffy. Add in the vanilla extract and the egg, mixing well until fully incorporated.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined to form the cookie dough.
  4. Assemble Cookies: Take a portion of the cookie dough and flatten it in the palm of your hand. Place a spoonful of the spiced apple filling in the center, then fold the dough around the filling, sealing it to form a ball. Repeat this process with the remaining dough and filling.
  5. Bake the Cookies: Preheat your oven to 350°F (175°C). Place the filled cookie balls onto a parchment-lined baking sheet about 2 inches apart. Bake for 12-15 minutes, or until the edges are lightly golden and the cookies are cooked through.
  6. Cool and Drizzle: Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Once cooled, generously drizzle the rich salted caramel sauce over each cookie.

Notes

  • Use firm tart apples like Granny Smith to ensure the filling holds texture and balances sweetness.
  • Ensure butter and egg are at room temperature to achieve a smooth, creamy dough.
  • For a thicker caramel drizzle, warm the caramel sauce slightly before drizzling.
  • Store cookies in an airtight container at room temperature for up to 3 days; refrigerate for longer freshness.
