For the Ganache:
- 8 oz dark chocolate, chopped
- ½ cup heavy cream
- 1 tbsp unsalted butter
- 1 tsp vanilla extract
- 1 tbsp instant espresso powder
For the Caramel:
- ½ cup granulated sugar
- 2 tbsp unsalted butter
- ¼ cup heavy cream
- ½ tsp sea salt
For Coating:
- ¼ cup cocoa powder
- ½ cup melted dark chocolate
- ¼ cup finely chopped nuts
Instructions
- Prepare the Ganache: Heat cream and butter until just simmering, pour over chocolate and whisk until smooth. Add vanilla and espresso. Chill.
- Make the Caramel: Heat sugar until amber, add butter, then cream and salt. Cool.
- Assemble: Roll ganache into balls, coat in caramel, then dip in chocolate and nuts. Chill until set.
Notes
- For extra flavor, try adding a sprinkle of sea salt on top of the truffles before they set.
- These truffles make a great gift for chocolate and coffee lovers.
