  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon sugar (optional, to help caramelize)
  • Salt and pepper, to taste

For the Chilli Oil:

  • 1/4 cup olive oil
  • 1 tablespoon chili flakes (adjust based on preferred spice level)
  • 1 garlic clove, minced
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon salt

For Garnish:

  • Fresh parsley, chopped (optional)
  • Grated Parmesan cheese (optional)
  • Extra chili oil (optional)

Instructions

  1. Cook the pasta: Boil water with salt, and cook the pasta according to package instructions. Drain and set aside.
  2. Caramelize the onions: In a pan, sauté onions with olive oil, butter, sugar, salt, and pepper until caramelized.
  3. Make the chili oil: Heat olive oil with chili flakes, garlic, smoked paprika, and salt in a saucepan for chili oil.
  4. Combine: Toss the pasta with caramelized onions, chili oil, and garnish with parsley and Parmesan cheese.

Notes

  • You can adjust the spice level by adding more or less chili flakes for the chili oil.
