Description

This Cheese and Bacon Cob Loaf Dip is a creamy, cheesy appetizer perfect for parties and gatherings. It combines rich cream cheese, tangy sour cream, mozzarella, cheddar, crispy bacon, and fresh green onions, all served in a hollowed-out cob loaf for a deliciously hearty presentation.

Ingredients

Scale

Bread

  • 1 loaf cob bread

Dip Mixture

  • 8 ounces cream cheese, softened
  • 8 ounces sour cream
  • 1 cup shredded mozzarella cheese, divided
  • ½ teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • 8 ounces bacon, cooked and chopped
  • ½ cup green onions, finely chopped

Instructions

  1. Prepare the Cob Loaf: Cut the top off the cob loaf and hollow out the inside, creating a bowl-like space, saving the bread chunks to serve with the dip.
  2. Cook the Bacon: Cook the bacon until crispy, then chop into small pieces. Drain excess fat and set aside.
  3. Make the Dip Mixture: In a large mixing bowl, combine the softened cream cheese, sour cream, garlic powder, half of the mozzarella cheese, cheddar cheese, cooked bacon, and green onions. Mix well until thoroughly combined.
  4. Fill the Bread Bowl: Spoon the dip mixture into the hollowed-out cob loaf, spreading it evenly.
  5. Top with Mozzarella: Sprinkle the remaining mozzarella cheese on top of the dip to create a cheesy crust.
  6. Bake the Dip: Preheat the oven to 350°F (175°C). Place the filled cob loaf on a baking sheet and bake for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Serve: Remove from the oven and let cool slightly. Serve warm with the reserved bread chunks for dipping.

Notes

  • Use thick-cut bacon for extra crunch.
  • For a spicier version, add a pinch of cayenne pepper or chopped jalapeños.
  • Make ahead by preparing the dip mixture and refrigerating overnight, then bake just before serving.
  • Serve immediately to enjoy the dip warm and melty.
