Ingredients
Scale
Main Ingredients
- 3 russet potatoes, cooked and cubed
- 1 block cheddar cheese, cut into strips
- ¼ cup bacon, diced
- ¼ cup green onion, diced
- ½ cup sour cream
- 1 teaspoon salt
- ½ teaspoon pepper
Coating Ingredients
- ⅔ cup cornstarch
- Flour, for dusting
- 1 egg, beaten
- 100 g panko breadcrumbs
Frying
- 1 litre vegetable oil or canola/peanut oil, for deep frying
Instructions
- Prepare the Potato Mixture: In a large bowl, mash the cooked and cubed russet potatoes until smooth. Mix in the diced bacon, green onion, sour cream, salt, and pepper until well combined to create a flavorful potato base.
- Shape the Sticks: Take a small amount of the potato mixture and flatten it slightly in your hand. Place a strip of cheddar cheese in the center and carefully wrap the potato mixture around the cheese to form a stick shape, ensuring the cheese is fully enclosed.
- Coat the Sticks: Lightly dredge each potato cheese stick in flour to help the coating stick. Then dip it into the beaten egg, followed by a thorough coating of cornstarch. Dip again into the egg wash and finally coat with panko breadcrumbs for a crispy crust.
- Heat the Oil: Pour the vegetable oil into a deep fryer or a large, deep pan and heat to 350°F (175°C). Ensure the oil is hot enough to fry without absorbing too much oil.
- Fry the Cheese Sticks: Carefully lower the coated potato cheese sticks into the hot oil in batches, avoiding overcrowding. Fry for about 3-4 minutes or until golden brown and crispy on all sides. Use a slotted spoon to remove them and drain on paper towels to remove excess oil.
- Serve: Serve your hot and crispy potato cheese sticks immediately with your favorite dipping sauces or enjoy on their own as a delightful snack or appetizer.
Notes
- Ensure the cheese is fully wrapped to prevent it from leaking during frying.
- You can substitute cheddar cheese with mozzarella for a more melty texture.
- Maintain oil temperature to avoid greasy sticks.
- Serve immediately for the best texture and flavor.
- Use gloves or a clean spoon to shape sticks for a cleaner process.
