Chicken Chow Mein

Chicken Chow Mein is a delicious stir-fried noodle dish that combines marinated chicken with vegetables in a savory sauce. It’s a quick and flavorful meal that is perfect for busy weeknights.

Marinating

  • 6 oz boneless chicken breast or thighs, thinly sliced
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 2 teaspoons cornstarch
  • 1/4 teaspoon salt

Sauce

  • 1/4 cup chicken broth
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons sugar
  • 1/4 teaspoon white pepper (or ground black pepper)
  • 1 teaspoon sesame oil

Stir fry

  • 2 tablespoons peanut oil (or vegetable oil)
  • 4 cups shredded cabbage
  • 2 cloves garlic, finely chopped
  • 1 tablespoon ginger, minced
  • 10 oz fresh chow mein noodles, or 6 oz (170 g) dried chow mein noodles
  • 2 small carrots, julienned (yields 1 cup)
  • 1 anaheim pepper or other hot pepper of your choice, sliced (Optional)
  • 4 green onions, cut into 2” (5 cm) pieces, white part halved lengthwise

Instructions

  1. Marinate the chicken: Combine chicken, Shaoxing wine, cornstarch, and salt in a bowl and let it marinate for 15-20 minutes.
  2. Prepare the sauce: Mix chicken broth, Shaoxing wine, oyster sauce, soy sauce, sugar, white pepper, and sesame oil in a bowl and set aside.
  3. Stir fry: Heat oil in a wok or large skillet, add garlic and ginger, then stir in the chicken, cabbage, carrots, noodles, and sauce. Cook until the chicken is cooked through and the vegetables are tender.
  4. Serve: Garnish with sliced hot peppers and green onions before serving.

Notes

  • You can customize this dish by adding other vegetables like bell peppers, snow peas, or broccoli.
  • If using dried chow mein noodles, cook them according to package instructions before stir-frying.
