Description

This Chili Cheese Dip is a warm, comforting appetizer perfect for game days, parties, or casual gatherings. Made with a hearty base of chili, creamy cream cheese, a blend of shredded pepper jack and sharp cheddar cheeses, and a hint of salsa, this dip offers a deliciously spicy and cheesy flavor. It’s easy to prepare and can be adjusted in heat with cayenne pepper or hot sauce for those who like it spicy.

Ingredients

Scale

Chili Base

  • 2 1/2 cups chili, homemade or 2 (14 oz) cans store-bought (625g)

Dairy & Cheese

  • 4 ounces cream cheese, cut into cubes (113g)
  • 2 cups shredded cheese (pepper jack and sharp cheddar blend) (226g)

Additions & Seasoning

  • 1/4 cup salsa (60g)
  • Cayenne pepper or hot sauce, optional, for heat

Instructions

  1. Prepare the Chili: Use your homemade chili or drain and heat the canned chili slightly to ensure it is warm and ready to mix.
  2. Combine Ingredients: In a medium saucepan or skillet over medium heat, add the warm chili, cream cheese cubes, shredded cheese, and salsa.
  3. Melt and Stir: Stir the mixture continuously as the cream cheese and shredded cheeses melt completely, forming a creamy, homogenous dip. Adjust heat to avoid burning.
  4. Add Heat (Optional): Stir in cayenne pepper or hot sauce to taste if you desire additional spiciness.
  5. Serve Warm: Transfer the chili cheese dip into a serving dish and keep warm while serving alongside chips, crackers, or vegetable sticks.

Notes

  • You can use any type of chili, but thicker chili works best for the dip consistency.
  • Adjust the cheese types or quantities to your preference for a milder or sharper taste.
  • Keep the dip on low heat or use a warming tray to prevent it from solidifying before serving.
  • Great served with tortilla chips, breadsticks, or crisp vegetables.
