Ingredients

Scale

Wet Ingredients

  • 1/4 cup (4 Tbsp; 56g) unsalted butter
  • 1 and 1/2 cups (300g) granulated sugar
  • 1/2 cup (120ml) milk
  • 2/3 cup (170g) creamy peanut butter
  • 1 Tablespoon (15ml) pure vanilla extract

Dry Ingredients

  • 1/4 cup (21g) natural unsweetened or Dutch-process cocoa powder
  • 3 cups (255g) old-fashioned whole rolled oats or quick oats
  • 1/8 teaspoon salt

Instructions

  1. Prepare the ingredients: Measure out all ingredients precisely to ensure the cookies set properly. Have the oats ready and set aside as they will be stirred in last.
  2. Combine butter, sugar, milk, and cocoa: In a medium saucepan, combine the unsalted butter, granulated sugar, milk, and cocoa powder. Place the saucepan over medium heat and stir continuously until the butter melts and the mixture is smooth.
  3. Bring mixture to a boil: Allow the mixture to come to a rolling boil, stirring frequently to prevent burning. Once boiling, let it cook for 1 minute exactly to achieve the right consistency for the cookies.
  4. Remove from heat and add peanut butter and vanilla: Take the saucepan off the heat and stir in the creamy peanut butter and pure vanilla extract until fully combined and smooth.
  5. Mix in dry ingredients: Immediately add the oats and salt to the chocolate mixture, stirring well until all ingredients are evenly incorporated.
  6. Form cookies: Drop spoonfuls of the mixture onto parchment paper or a silicone mat, shaping them into cookie forms. Work quickly as the mixture will start to set as it cools.
  7. Let cookies set: Allow the cookies to cool and harden at room temperature for at least 30 minutes. For faster setting, you can refrigerate them for 15 to 20 minutes.

Notes

  • Use natural or Dutch-process cocoa based on your flavor preference; Dutch-process tends to yield a smoother chocolate flavor.
  • Old-fashioned oats provide a chewier texture, while quick oats result in a softer cookie.
  • Do not skip the boiling step; boiling for exactly 1 minute ensures proper candy consistency and prevents grainy texture.
  • Store cookies in an airtight container at room temperature for up to 1 week, or refrigerate to extend freshness.
  • Make sure to drop cookies onto parchment or a silicone mat to prevent sticking.
