Ingredients
Scale
Wet Ingredients
- 1/4 cup (4 Tbsp; 56g) unsalted butter
- 1 and 1/2 cups (300g) granulated sugar
- 1/2 cup (120ml) milk
- 2/3 cup (170g) creamy peanut butter
- 1 Tablespoon (15ml) pure vanilla extract
Dry Ingredients
- 1/4 cup (21g) natural unsweetened or Dutch-process cocoa powder
- 3 cups (255g) old-fashioned whole rolled oats or quick oats
- 1/8 teaspoon salt
Instructions
- Prepare the ingredients: Measure out all ingredients precisely to ensure the cookies set properly. Have the oats ready and set aside as they will be stirred in last.
- Combine butter, sugar, milk, and cocoa: In a medium saucepan, combine the unsalted butter, granulated sugar, milk, and cocoa powder. Place the saucepan over medium heat and stir continuously until the butter melts and the mixture is smooth.
- Bring mixture to a boil: Allow the mixture to come to a rolling boil, stirring frequently to prevent burning. Once boiling, let it cook for 1 minute exactly to achieve the right consistency for the cookies.
- Remove from heat and add peanut butter and vanilla: Take the saucepan off the heat and stir in the creamy peanut butter and pure vanilla extract until fully combined and smooth.
- Mix in dry ingredients: Immediately add the oats and salt to the chocolate mixture, stirring well until all ingredients are evenly incorporated.
- Form cookies: Drop spoonfuls of the mixture onto parchment paper or a silicone mat, shaping them into cookie forms. Work quickly as the mixture will start to set as it cools.
- Let cookies set: Allow the cookies to cool and harden at room temperature for at least 30 minutes. For faster setting, you can refrigerate them for 15 to 20 minutes.
Notes
- Use natural or Dutch-process cocoa based on your flavor preference; Dutch-process tends to yield a smoother chocolate flavor.
- Old-fashioned oats provide a chewier texture, while quick oats result in a softer cookie.
- Do not skip the boiling step; boiling for exactly 1 minute ensures proper candy consistency and prevents grainy texture.
- Store cookies in an airtight container at room temperature for up to 1 week, or refrigerate to extend freshness.
- Make sure to drop cookies onto parchment or a silicone mat to prevent sticking.
