Description

This festive Christmas Peppermint Slice combines a rich, cocoa-flavored biscuit base with a smooth white chocolate peppermint topping, studded with colorful Christmas M&Ms and crushed candy canes for a delightful holiday treat. Perfect for sharing at parties or as a sweet seasonal snack.

Ingredients

Scale

Base

  • 250g butter
  • ¼ cup cocoa powder
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 2 packets (250g each) Marie or wine biscuits, crushed (not too finely)

Topping

  • 190g white chocolate
  • 1 tablespoon vegetable oil
  • 1 teaspoon peppermint essence
  • 100g Christmas M&Ms
  • 4 candy canes, crushed

Instructions

  1. Prepare the Base: In a medium saucepan, melt the butter over low heat. Once melted, whisk in the cocoa powder and brown sugar until fully combined and smooth. Remove from heat and stir in the vanilla extract and milk until well incorporated.
  2. Add the Biscuits: Fold the crushed Marie or wine biscuits into the chocolate mixture gently, ensuring that all the biscuit pieces are coated evenly without breaking them too finely.
  3. Set the Base: Line a slice tin or tray with baking paper. Press the biscuit mixture firmly into the tin, making an even layer. Place it in the refrigerator to chill and set for at least 1 hour.
  4. Prepare the Topping: Melt the white chocolate and vegetable oil together in a heatproof bowl over simmering water or in short bursts in the microwave, stirring frequently until smooth. Stir in the peppermint essence until combined.
  5. Assemble the Slice: Pour the white chocolate peppermint mixture evenly over the chilled biscuit base. Smooth the surface with a spatula.
  6. Add Decorations: Sprinkle the Christmas M&Ms evenly over the top, then scatter the crushed candy canes on for extra festive crunch and flavor.
  7. Final Chill: Return the slice to the refrigerator and chill for another 2 hours or until the topping is firm.
  8. Serve: Once set, remove from the tin using the baking paper and cut into slices. Serve chilled for the best texture and flavor.

Notes

  • Use room temperature butter for easier melting.
  • Do not crush biscuits too finely; some texture is important for the base.
  • If peppermint essence is unavailable, peppermint extract can be used but reduce quantity as extracts are stronger.
  • White chocolate can be substituted with peppermint-flavored chocolate for enhanced peppermint taste.
  • Store the slice in an airtight container in the refrigerator for up to 5 days.
  • This slice can be frozen for up to 1 month; thaw in the fridge before serving.
