Main Ingredients:
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 3 carrots, medium size, diced
- 3 celery ribs, diced
- 1 tablespoon chicken stock powder or 2 chicken bouillon cubes
- ½ teaspoon dried parsley
- ½ teaspoon dried thyme
- 1 bay leaf
- ¼ teaspoon finely ground black pepper
- 4 cups low-sodium chicken broth
- 4 cups water
- 1 to 1.5 lb skinless chicken thighs, bone-in
- 1 cup uncooked rice
- Salt to taste
- 1 tablespoon finely chopped parsley (optional)
Instructions
- Saute Aromatics: In a large pot, heat olive oil over medium heat. Add garlic, onion, carrots, and celery. Cook until softened.
- Add Seasonings and Broth: Stir in chicken stock powder, parsley, thyme, bay leaf, black pepper, chicken broth, and water. Bring to a boil.
- Add Chicken and Rice: Add chicken thighs and rice to the pot. Reduce heat, cover, and simmer until chicken is cooked through and rice is tender.
- Finish and Serve: Remove chicken from the pot, shred the meat, and return it to the soup. Season with salt to taste. Serve hot, garnished with parsley if desired.
Notes
- You can use chicken breasts instead of thighs for a leaner option.
- Feel free to add more vegetables like peas or corn for extra nutrition.
