  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 3 carrots, medium size, diced
  • 3 celery ribs, diced
  • 1 tablespoon chicken stock powder or 2 chicken bouillon cubes
  • ½ teaspoon dried parsley
  • ½ teaspoon dried thyme
  • 1 bay leaf
  • ¼ teaspoon finely ground black pepper
  • 4 cups low-sodium chicken broth
  • 4 cups water
  • 1 to 1.5 lb skinless chicken thighs, bone-in
  • 1 cup uncooked rice
  • Salt to taste
  • 1 tablespoon finely chopped parsley (optional)

Instructions

  1. Saute Aromatics: In a large pot, heat olive oil over medium heat. Add garlic, onion, carrots, and celery. Cook until softened.
  2. Add Seasonings and Broth: Stir in chicken stock powder, parsley, thyme, bay leaf, black pepper, chicken broth, and water. Bring to a boil.
  3. Add Chicken and Rice: Add chicken thighs and rice to the pot. Reduce heat, cover, and simmer until chicken is cooked through and rice is tender.
  4. Finish and Serve: Remove chicken from the pot, shred the meat, and return it to the soup. Season with salt to taste. Serve hot, garnished with parsley if desired.
