Scale
Dry Ingredients
- 3 cups all-purpose flour
- 1 1/2 tablespoons baking powder
- 1 1/4 teaspoons salt
Wet Ingredients
- 1 1/2 cups milk (any kind)
- 1 cup cottage cheese (2% fat preferred)
Instructions
- Preheat and prepare pan: Preheat your oven to 375°F (190°C) and line a 9×5-inch loaf pan with parchment paper to prevent sticking and ensure easy removal after baking.
- Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, and salt. Then sift the mixture through a fine mesh sieve into another large bowl to aerate and create a lighter bread texture.
- Add wet ingredients: Gently fold in the milk and cottage cheese using a spatula until just combined. The dough will be thick, sticky, and spreadable. Avoid overmixing to maintain tenderness in the bread.
- Transfer dough to pan: Spoon the sticky dough into the prepared loaf pan and smooth the surface with a spatula for an even shape.
- Bake the bread: Bake in the preheated oven for 70 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, loosely cover it with foil or parchment paper to prevent burning.
- Cool the bread: Remove the loaf from the oven and let it cool in the pan for 5 minutes. Transfer to a wire rack and allow it to cool completely for about 1 hour to let the crumb set fully.
- Slice and serve: Using a serrated knife, cut the bread into 10 slices. Enjoy fresh, toasted, or with your favorite sandwich fillings.
Notes
- Use 2% fat cottage cheese for best texture; full-fat or low-fat will also work but may slightly alter moisture.
- Do not overmix once wet ingredients are added to keep the bread tender.
- Cover the bread loosely with foil if it browns too fast in the oven.
- Allow the bread to cool completely before slicing for clean cuts and proper texture.
- You can substitute milk with any dairy or plant-based milk as preferred.
