- 1 large orange, zested and juiced

- 1 teaspoon fresh thyme or rosemary (or 1/2 teaspoon dried)
- Salt and black pepper to taste

Instructions
- Prepare the Sauce: In a saucepan, combine cranberries, orange juice, zest, honey/maple syrup, garlic, thyme/rosemary, salt, pepper, and broth/water. Simmer until cranberries burst.
- Cook the Chicken: Season chicken with salt and pepper. In a skillet, brown chicken on both sides. Pour sauce over chicken and simmer until chicken is cooked through.
- Optional: Stir in balsamic vinegar and Dijon mustard for extra flavor.
Notes
- You can use frozen cranberries if fresh ones are not available.
