Ingredients
Scale
Pasta
- 8 oz fettucine noodles (half of a 1 lb. box)
Sauce
- 4 oz cream cheese
- 2 Tbsp salted butter
- 16 oz sour cream
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp garlic powder
- 1 cup shredded parmesan cheese, divided
- 1/4 tsp paprika
Instructions
- Cook the noodles: Bring a large pot of salted water to a boil and cook the fettucine noodles according to package instructions until al dente. Drain and set aside.
- Prepare the sauce base: In a large skillet over medium heat, melt the salted butter. Add the cream cheese and stir until smooth and fully melted.
- Add sour cream and seasonings: Lower the heat to medium-low and stir in the sour cream, salt, pepper, garlic powder, and paprika. Mix well to combine into a creamy sauce.
- Incorporate parmesan cheese: Gradually add half of the shredded parmesan cheese to the sauce, stirring until melted and smooth.
- Toss noodles with sauce: Add the cooked noodles into the skillet with the sauce. Toss gently to coat the noodles thoroughly.
- Serve and garnish: Transfer noodles to serving plates and sprinkle the remaining parmesan cheese on top. Serve immediately while warm.
Notes
- Use freshly grated parmesan for best flavor and melting quality.
- If sauce becomes too thick, add a splash of the pasta cooking water to loosen.
- For a lighter option, substitute light sour cream and reduced-fat cream cheese.
- Adding fresh parsley or chives as garnish can add a touch of color and freshness.
