- 1 whole head of garlic
- 1 small onion, chopped
- 2 tbsp olive oil

- 2 cups vegetable or chicken broth
- ½ cup heavy cream (or coconut milk for dairy-free option)
- ¼ cup fresh basil leaves
- Salt and black pepper to taste
- ½ tsp red pepper flakes (optional, for heat)
Instructions
- Preheat: Preheat the oven to 400°F (200°C).
- Roast Tomatoes and Garlic: Place halved tomatoes and whole head of garlic on a baking sheet. Drizzle with olive oil and roast for 30-40 minutes until caramelized.
- Blend Ingredients: In a blender, combine roasted tomatoes, squeezed roasted garlic, chopped onion, broth, cream, basil, salt, pepper, and red pepper flakes. Blend until smooth.
- Simmer: Pour the mixture into a pot and simmer for 10-15 minutes. Adjust seasoning to taste.
- Serve: Ladle the soup into bowls, garnish with fresh basil, and serve hot.
