Description

This comforting Slow Cooker Creamy Tortellini & Sausage Soup combines savory Italian sausage, tender cheese tortellini, and fresh spinach in a rich, creamy tomato broth. Perfect for an easy weeknight meal, this hearty soup simmers slowly to develop deep flavors and creamy texture.

Ingredients

Scale

Sausage and Broth

  • 1 lb Italian sausage, browned and drained
  • 4 cups vegetable or chicken broth (32 oz container)

Tomatoes and Cheese

  • 2 (15 oz) cans Italian diced tomatoes
  • 8 ounces cream cheese, cubed

Pasta and Greens

  • 1 (20 oz) bag frozen cheese tortellini
  • 34 cups fresh spinach

Instructions

  1. Brown the sausage: In a skillet over medium heat, cook the Italian sausage until fully browned and no longer pink. Drain the excess fat before adding the sausage to the slow cooker.
  2. Combine ingredients in slow cooker: Add the browned sausage, two cans of Italian diced tomatoes (undrained), and the broth to the slow cooker. Stir the mixture well.
  3. Cook slowly: Cover and cook on low for 4-6 hours or on high for 2-3 hours to allow flavors to meld.
  4. Add cream cheese and tortellini: About 30 minutes before serving, add the cubed cream cheese and frozen tortellini into the slow cooker. Stir gently to incorporate the cream cheese as it melts and cook until tortellini are tender.
  5. Add fresh spinach: In the last 5-10 minutes of cooking, stir in the fresh spinach until it wilts.
  6. Serve: Ladle the soup into bowls and enjoy warm as a hearty and creamy meal.

Notes

  • For a spicier version, use spicy Italian sausage.
  • If you prefer a thicker soup, you can reduce the broth to 3 cups.
  • Fresh spinach can be substituted with kale or Swiss chard.
  • Ensure you drain the sausage well to avoid a greasy soup.
  • Tortellini can be replaced with other stuffed pastas like ravioli if desired.
