Ingredients
Scale
Main Ingredients
- 10 ounces Cadbury mini eggs (about 1.5 cups)
- 3 tablespoons salted butter
- 10 ounces marshmallows
- 6 cups Rice Krispies cereal
Instructions
- Prepare baking pan: Grease a 9×13-inch pan thoroughly with cooking spray to prevent sticking and set aside for later use.
- Chop mini eggs: Roughly chop about ½ cup of the Cadbury mini eggs into small pieces, leaving the remaining whole for topping.
- Melt butter: In a large non-stick saucepan over low heat, melt 3 tablespoons of salted butter carefully without burning.
- Add marshmallows: Stir the 10 ounces of marshmallows into the melted butter continuously until they are completely melted and smooth.
- Combine cereal: Turn off the heat and fold in the 6 cups of Rice Krispies cereal until most of the cereal is well coated with the marshmallow mixture.
- Mix in chopped eggs: When the mixture has cooled slightly but is still pliable, gently stir in the chopped mini eggs to distribute them evenly.
- Transfer to pan: Scrape the sticky mixture into the prepared pan using a spatula.
- Press down mixture: Coat a spatula with cooking spray and gently press the mixture down evenly into the pan to compact it.
- Add topping: Sprinkle the remaining whole mini eggs evenly over the top and press down lightly to embed them into the treats.
- Cool and cut: Allow the treats to cool and set for at least 30 minutes at room temperature. Once firm, remove from pan and cut into squares for serving.
Notes
- Storage: Store Rice Krispie treats in an airtight container at room temperature for up to 3 days. Place waxed paper between layers to prevent sticking. Do not refrigerate as they will harden. Freeze for 4-6 weeks in a freezer-safe bag or container after cutting into squares. Thaw at room temperature about 15 minutes before serving to regain softness.
- Gluten-Free Tip: Traditional Rice Krispies contain malt syrup derived from barley and may not be gluten-free. Substitute with a certified gluten-free crispy rice cereal to make this recipe gluten-free, as all other ingredients are inherently gluten-free.
