  • 6 boneless skinless chicken thighs or breasts (4 to 6 ounces each), cut into bite-sized pieces

  • 1 recipe or package fajita seasoning mix (taco seasoning may also be used)

Instructions

  1. Preheat and Sauté Chicken: Preheat your oven to 350°F (175°C). Heat the olive oil over medium heat in a skillet. Add the bite-sized chicken pieces and cook until they are fully cooked through and no longer pink inside. Remove the chicken from the skillet and set aside.
  2. Sauté Vegetables: In the same skillet, add the sliced onions and bell peppers. Cook them over medium heat until they reach your desired tenderness, usually about 5 to 7 minutes.
  3. Combine Ingredients: Return the cooked chicken to the skillet with the sautéed vegetables. Stir in the fajita seasoning, sour cream, and softened cream cheese. Mix everything thoroughly until well combined and creamy.
  4. Add Cheese and Bake: Evenly sprinkle the grated cheddar cheese over the top of the mixture in the skillet. Transfer the skillet to the oven (or if your skillet is not ovenproof, transfer the mixture to a greased casserole dish). Bake for 10 to 15 minutes or until the cheese is melted and bubbly.
