Main Ingredients:
- 8 flour tortillas (2 per quesadilla)
- 2 cups shredded chicken*
- 1½ cups shredded Monterey jack cheese
- ½ cup BBQ sauce, plus more for serving
- ½ cup red onion, thinly sliced
- ⅓ cup cilantro, chopped (leaves & stems)
Instructions
- Prepare the Ingredients: Lay out 4 tortillas and top each with shredded chicken, cheese, BBQ sauce, red onion, and cilantro. Place another tortilla on top of each and press down gently.
- Cook the Quesadillas: In a large skillet over medium heat, cook each quesadilla for 2-3 minutes per side until golden and crispy.
- Serve: Cut the quesadillas into wedges and serve with extra BBQ sauce for dipping.
Notes
- *You can use rotisserie chicken or leftover cooked chicken for this recipe.
- To make it spicy, add some sliced jalapeños or a dash of hot sauce.
