Description

These Easy BBQ Chicken Quesadillas are a delicious and satisfying meal or snack that can be made in no time. Packed with shredded chicken, gooey cheese, tangy BBQ sauce, and flavorful cilantro, they are sure to be a hit with the whole family.

Main Ingredients:

  • 8 flour tortillas (2 per quesadilla)
  • 2 cups shredded chicken*
  • 1½ cups shredded Monterey jack cheese
  • ½ cup BBQ sauce, plus more for serving
  • ½ cup red onion, thinly sliced
  • ⅓ cup cilantro, chopped (leaves & stems)

Instructions

  1. Prepare the Ingredients: Lay out 4 tortillas and top each with shredded chicken, cheese, BBQ sauce, red onion, and cilantro. Place another tortilla on top of each and press down gently.
  2. Cook the Quesadillas: In a large skillet over medium heat, cook each quesadilla for 2-3 minutes per side until golden and crispy.
  3. Serve: Cut the quesadillas into wedges and serve with extra BBQ sauce for dipping.

Notes

  • *You can use rotisserie chicken or leftover cooked chicken for this recipe.
  • To make it spicy, add some sliced jalapeños or a dash of hot sauce.
