Dip Ingredients
- 2 packages (5.3 oz each) Boursin cheese (herb and garlic flavor recommended)
- 1 1/2 cups chopped, de-seeded vine-ripened or Roma tomatoes
- 1/4 cup packed fresh basil leaves, chopped, plus additional for garnish
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic, pressed or very finely minced
- Salt and fresh ground black pepper to taste
- Balsamic reduction, Alessi brand recommended, for drizzling
Serving
- Crackers or homemade crostini (see notes for crostini recipe)
Instructions
- Prepare the Tomatoes and Basil: Start by chopping the tomatoes finely and removing the seeds to avoid excess moisture in the dip. Chop the fresh basil leaves and set aside both the tomatoes and basil.
- Mix the Dip Base: In a mixing bowl, combine the two packages of Boursin cheese with the finely minced garlic, olive oil, and balsamic vinegar. Stir until smooth and well blended.
- Add Fresh Ingredients: Gently fold the chopped tomatoes and basil into the Boursin mixture. Season with salt and freshly ground black pepper to taste, mixing carefully so the tomatoes stay chunky.
- Chill the Dip: Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld together.
- Prepare Crostini (if making homemade): Slice a baguette or your preferred bread thinly, brush with olive oil, and toast in a preheated oven at 375°F (190°C) until golden and crisp, about 8-10 minutes.
- Serve: Transfer the bruschetta dip to a serving bowl, garnish with extra basil leaves, and drizzle balsamic reduction over the top. Serve alongside crackers or crostini for dipping.
Notes
- If you prefer, you can substitute crackers for crostini for a quicker option.
- To make homemade crostini, slice baguette thin, brush with olive oil, and bake at 375°F for 8-10 minutes until crisp.
- Boursin cheese comes in various flavors; the herb and garlic variety enhances the dip best.
- De-seeding tomatoes helps prevent the dip from being too watery.
- Balsamic reduction adds a sweet tangy finish but can be omitted if unavailable.
