For the Baked Apples:
- 4 medium apples, peeled and chopped into 1/2-inch pieces
- 2 tablespoons butter
- 3 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
For the Cranberry Compote:
- 1 cup fresh or frozen cranberries
- 1/4 cup granulated sugar
- 2 tablespoons water
- 1 tablespoon orange juice (optional)
For Assembly:
- 2 cups vanilla Greek yogurt or whipped cream
- 1 sleeve shortbread cookies, crushed
- 6–8 clear plastic cups or mason jars
- Mini cinnamon sticks or leaf-shaped sprinkles for garnish
Instructions
- Bake the Apples: Preheat the oven to 350°F. In a skillet, melt butter, add apples, brown sugar, cinnamon, and vanilla. Cook until apples are soft.
- Make the Cranberry Compote: In a saucepan, combine cranberries, sugar, water, and orange juice. Cook until cranberries burst and mixture thickens.
- Assemble the Parfaits: Layer baked apples, cranberry compote, yogurt or whipped cream, and crushed shortbread cookies in cups. Repeat layers and garnish with cinnamon sticks or sprinkles.
Notes
- You can adjust the sweetness of the cranberry compote by adding more or less sugar to suit your taste.
- Feel free to use your favorite type of apples for the baked apples, such as Granny Smith or Honeycrisp.
