These Easy Cranberry Apple Pie Parfaits are a delicious and festive dessert that layers baked apples, cranberry compote, vanilla yogurt, and crushed shortbread cookies for a delightful treat.

  • 4 medium apples, peeled and chopped into 1/2-inch pieces
  • 2 tablespoons butter
  • 3 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract

For the Cranberry Compote:

  • 1 cup fresh or frozen cranberries
  • 1/4 cup granulated sugar
  • 2 tablespoons water
  • 1 tablespoon orange juice (optional)

For Assembly:

  • 2 cups vanilla Greek yogurt or whipped cream
  • 1 sleeve shortbread cookies, crushed
  • 68 clear plastic cups or mason jars
  • Mini cinnamon sticks or leaf-shaped sprinkles for garnish

Instructions

  1. Bake the Apples: Preheat the oven to 350°F. In a skillet, melt butter, add apples, brown sugar, cinnamon, and vanilla. Cook until apples are soft.
  2. Make the Cranberry Compote: In a saucepan, combine cranberries, sugar, water, and orange juice. Cook until cranberries burst and mixture thickens.
  3. Assemble the Parfaits: Layer baked apples, cranberry compote, yogurt or whipped cream, and crushed shortbread cookies in cups. Repeat layers and garnish with cinnamon sticks or sprinkles.

Notes

  • You can adjust the sweetness of the cranberry compote by adding more or less sugar to suit your taste.
  • Feel free to use your favorite type of apples for the baked apples, such as Granny Smith or Honeycrisp.
