Main Ingredients:
- 250 g (½ lb) uncooked spaghetti
- 500 g (1 lb) fresh tomatoes, chopped (or use 1 x 400 g tin of chopped tomatoes)
- 2 tablespoon olive oil
- 3 cloves garlic, minced
- 1 onion, finely chopped
- 500 ml (2 cups) chicken or vegetable stock, use stock cube for convenience
- 150 ml (¾ cups) double cream
- ½ bunch fresh basil
Instructions
- Cook Pasta: Cook spaghetti according to package instructions until al dente. Drain and set aside.
- Prepare Sauce: In the same pot, heat olive oil and sauté garlic and onion until fragrant. Add tomatoes and cook until softened. Pour in stock and cream, then simmer until slightly thickened.
- Combine: Add cooked pasta to the sauce, toss to coat well. Serve hot, garnished with fresh basil.
Notes
- You can add cooked chicken or shrimp for extra protein.
- Feel free to add grated Parmesan cheese on top before serving.
