Description

This Easy One Pot Creamy Tomato Pasta is a simple and delicious dish that combines the flavors of fresh tomatoes, garlic, and basil with creamy double cream. Perfect for a quick and satisfying meal!

Main Ingredients:

  • 250 g (½ lb) uncooked spaghetti
  • 500 g (1 lb) fresh tomatoes, chopped (or use 1 x 400 g tin of chopped tomatoes)
  • 2 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 500 ml (2 cups) chicken or vegetable stock, use stock cube for convenience
  • 150 ml (¾ cups) double cream
  • ½ bunch fresh basil

Instructions

  1. Cook Pasta: Cook spaghetti according to package instructions until al dente. Drain and set aside.
  2. Prepare Sauce: In the same pot, heat olive oil and sauté garlic and onion until fragrant. Add tomatoes and cook until softened. Pour in stock and cream, then simmer until slightly thickened.
  3. Combine: Add cooked pasta to the sauce, toss to coat well. Serve hot, garnished with fresh basil.

Notes

  • You can add cooked chicken or shrimp for extra protein.
  • Feel free to add grated Parmesan cheese on top before serving.
