This Easy Shrimp Vegetable Skillet recipe combines succulent shrimp with fresh zucchini and bell peppers, all seasoned with a flavorful Cajun spice blend. It’s a quick, one-pan meal that’s perfect for a healthy weeknight dinner, delivering a balance of protein and vegetables with a spicy kick.

Ingredients

Scale

Shrimp Mixture

  • 1 pound shrimp
  • 1 Tablespoon olive oil
  • 2 cloves garlic, minced
  • ½ Tablespoon Cajun seasoning

Vegetables

  • 1 large zucchini, sliced
  • 2 bell peppers, cubed
  • 1 Tablespoon olive oil
  • 1 Tablespoon Cajun seasoning

Instructions

  1. Prepare the Shrimp: In a bowl, combine the shrimp with 1 tablespoon of olive oil, minced garlic, and ½ tablespoon of Cajun seasoning. Toss well to coat and set aside to marinate briefly.
  2. Cook the Vegetables: Heat the remaining 1 tablespoon of olive oil along with 1 tablespoon of Cajun seasoning in a large skillet over medium heat. Add the sliced zucchini and cubed bell peppers. Cook the vegetables for 4 to 5 minutes until they are tender-crisp. Remove the vegetables from the pan and place them in a bowl to keep warm.
  3. Cook the Shrimp: In the same skillet, add the seasoned shrimp. Cook for about 5 minutes, stirring occasionally, until the shrimp turn pink and are fully cooked through.
  4. Combine and Finish: Return the cooked vegetables to the skillet with the shrimp. Stir everything together and cook for an additional 3 to 4 minutes to heat through and allow the flavors to meld. Serve hot.

Notes

  • You can substitute the bell peppers with any other vegetables like asparagus or snap peas.
  • For less spice, reduce the amount of Cajun seasoning to your preference.
  • Ensure not to overcook the shrimp to keep them tender and juicy.
  • This dish pairs well with rice, quinoa, or crusty bread for a complete meal.
