  • 125 g (4 ½ oz) Stilton cheese, crumbled or roughly chopped (Gorgonzola can be used for a milder flavor)
  • 1 tbsp Worcestershire sauce
  • ¼ tsp black pepper

Instructions

  1. Prepare Aromatics: Melt the unsalted butter in a saucepan over medium heat. Add the finely chopped banana shallot (or onion) and minced garlic. Cook gently until softened and fragrant, about 2 to 3 minutes, ensuring they don’t brown.
  2. Add Cream: Pour the double cream into the pan with the softened aromatics. Stir well and bring the mixture to a gentle simmer, allowing it to heat through evenly, about 2 minutes.
  3. Melt Cheese: Lower the heat and add the crumbled Stilton cheese (or Gorgonzola). Stir continuously until the cheese melts and the sauce becomes smooth and creamy.
  4. Season Sauce: Add the Worcestershire sauce and black pepper to the sauce. Mix well to combine all flavors and heat through for another minute. Taste and adjust seasoning if needed.
