Sauce Ingredients
- 2 tbsp unsalted butter
- 1 banana shallot, peeled and finely chopped (or ½ small onion)
- 1 clove garlic, minced
- 150 ml (½ cup + 2 tbsp) double (heavy) cream
- 125 g (4 ½ oz) Stilton cheese, crumbled or roughly chopped (Gorgonzola can be used for a milder flavor)
- 1 tbsp Worcestershire sauce
- ¼ tsp black pepper
Instructions
- Prepare Aromatics: Melt the unsalted butter in a saucepan over medium heat. Add the finely chopped banana shallot (or onion) and minced garlic. Cook gently until softened and fragrant, about 2 to 3 minutes, ensuring they don’t brown.
- Add Cream: Pour the double cream into the pan with the softened aromatics. Stir well and bring the mixture to a gentle simmer, allowing it to heat through evenly, about 2 minutes.
- Melt Cheese: Lower the heat and add the crumbled Stilton cheese (or Gorgonzola). Stir continuously until the cheese melts and the sauce becomes smooth and creamy.
- Season Sauce: Add the Worcestershire sauce and black pepper to the sauce. Mix well to combine all flavors and heat through for another minute. Taste and adjust seasoning if needed.
- Serve: Remove the sauce from heat and pour it over roasted meats, vegetables, or side dishes as part of your festive Christmas dinner.
Notes
- Use Gorgonzola cheese if you prefer a milder blue cheese flavor.
- Do not let the sauce boil vigorously to prevent the cream from curdling.
- Serve immediately for best texture and flavor.
- This sauce pairs exceptionally well with beef, lamb, and roasted vegetables.
- Worcestershire sauce adds umami and depth but can be omitted for a milder taste.
