  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 to 1 1/2 teaspoon chipotle chili powder (optional for more heat)
  • 1/4 teaspoon pepper

Avocado Salsa

  • 2 medium avocados, ripe but firm, chopped
  • 1 cup cherry tomatoes, quartered OR 2 Roma tomatoes, seeded and chopped
  • Fresh corn from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeno pepper, diced, seeds separated
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced or 1/4 teaspoon garlic powder
  • 2 tablespoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper, or more to taste

Instructions

  1. Prepare the Chicken Rub: In a small bowl, whisk all Fiesta Lime Rub ingredients together until well combined. Rub the mixture evenly all over the pounded chicken breasts. If time allows, let the chicken sit at room temperature for 30 minutes or refrigerate up to 8 hours, then bring back to room temperature before cooking to maximize flavor. During marinating, prepare the avocado salsa as described below.
  2. Stovetop Preparation (if using skillet or grill pan): Remove chicken from the refrigerator and let rest at room temperature for 15-30 minutes if previously chilled. Heat and lightly grease an indoor grill pan or skillet over medium-high heat until very hot. Place the chicken in the pan and cook undisturbed for 3-5 minutes to develop a nice browned or slightly blackened crust.
  3. Finish Cooking on Stovetop: Flip the chicken, cover the pan, and reduce heat to medium. Cook for an additional 5-7 minutes, depending on thickness, until the chicken is cooked through (internal temperature reaches 165°F). Remove from heat and let rest on a cutting board for 5 minutes before slicing. Optionally squeeze fresh lime juice over the chicken before serving.
  4. Grilling Preparation (if using outdoor grill): Preheat your grill to medium heat, about 375-450°F, and lightly grease the grates. Let refrigerated chicken sit at room temperature for 15-30 minutes before grilling to ensure even cooking.
  5. Grill the Chicken: Place the chicken breasts on the grill and cook undisturbed for 5-7 minutes on each side, or until internal temperature reaches 165°F and chicken is fully cooked. Remove from grill and let rest 5 minutes before slicing.
  6. Prepare the Avocado Salsa: In a large bowl, combine cherry or Roma tomatoes, fresh corn, red onion, red bell pepper, jalapeno (seeds reserved for optional heat), cilantro, garlic, lime juice, ground cumin, salt, and pepper. Cover with plastic wrap and chill for 30 minutes up to 24 hours to blend flavors.
  7. Finish Salsa: Just before serving, gently fold in the chopped avocados. Taste and adjust seasoning with more salt, pepper, and jalapeno seeds if more heat is desired. Serve immediately alongside the chicken.
