Description

Freakin’ Fantastic Fried Rice is a quick and flavorful Asian-inspired dish that turns day-old rice into a delicious main or side. This easy-to-make recipe combines vegetables, scrambled eggs, and a perfect balance of soy and sesame oils for a savory, satisfying dish that can be whipped up in minutes on the stovetop.

Ingredients

Scale

Rice and Eggs

  • 2 cups cooked rice (preferably day-old)
  • 2 eggs, scrambled

Vegetables

  • 1/2 cup diced carrots
  • 1/2 cup peas

Oils and Seasoning

  • 2 tablespoons vegetable oil
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the Ingredients: Gather all ingredients. If not already cooked, scramble the eggs in a small bowl and set aside. Dice the carrots and measure out the peas.
  2. Heat the Oil: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.
  3. Cook the Vegetables: Add diced carrots and peas to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
  4. Add the Eggs: Push the vegetables to one side of the skillet. Pour the scrambled eggs onto the other side and cook, stirring gently, until they are just set.
  5. Combine Rice and Seasoning: Add the cooked rice to the skillet, breaking up any clumps. Stir to combine with eggs and vegetables. Pour 1/4 cup soy sauce and 1 tablespoon sesame oil evenly over the rice, then sprinkle 1/4 teaspoon black pepper.
  6. Stir-Fry Everything Together: Toss all the ingredients thoroughly for 5-7 minutes, allowing the rice to heat through and the flavors to meld. Ensure you stir constantly to prevent sticking and promote even cooking.
  7. Serve Hot: Once the rice is heated thoroughly and has absorbed the sauces, remove from heat and serve immediately.

Notes

  • Using day-old rice is crucial as it helps prevent the fried rice from becoming mushy.
  • You can substitute the vegetables with others like bell peppers, corn, or green onions as desired.
  • For extra protein, consider adding cooked chicken, shrimp, or tofu.
  • Adjust soy sauce quantity according to your taste and dietary needs to control saltiness.
  • Sesame oil has a strong flavor, so use the amount specified or reduce if preferred.
