- 2 Tbsp. sherry vinegar or red wine vinegar

- 4 oz. Gruyère cheese, grated
- Fresh thyme, for serving
Instructions
- Prepare the Onion Mixture: Heat the olive oil and butter in a large skillet over medium heat. Add the thinly sliced onions, seasoning with kosher salt and freshly ground black pepper. Cook the onions slowly, stirring occasionally, until caramelized and golden brown, about 25-30 minutes. This slow cooking brings out the deep, sweet flavor of the onions.
- Add Broth and Vinegar: Pour in the low-sodium beef broth and the sherry vinegar (or red wine vinegar). Stir to combine and allow the mixture to simmer for about 5 minutes until slightly reduced. Remove from heat and set aside.
- Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C). Lightly grease a baking pan with cooking spray to prevent sticking.
- Prepare Crescent Rolls: Unroll the crescent rolls and press the dough together to form a large rectangle. Use a knife or pizza cutter to cut the dough into squares, approximately 2×2 inches in size.
- Assemble Bites: Place the dough squares into the prepared pan, pushing the edges slightly together to form little cups or pockets. Spoon the caramelized onion mixture evenly onto each dough square. Sprinkle the grated Gruyère cheese generously over the onion topping.
- Bake: Bake in the preheated oven for 12-15 minutes or until the crescent dough is golden brown and the cheese is melted and bubbly.
- Garnish and Serve: Remove from the oven and let cool slightly. Sprinkle fresh thyme leaves over the bites before serving warm.
