Description

This French-style beef stew is rich and hearty, packed with tender beef, bacon, and an assortment of vegetables simmered in a flavorful red wine sauce.

Main Ingredients:

  • 2 lbs beef chuck, cut into 1.5-inch cubes
  • 6 slices thick-cut bacon, diced
  • 1 large yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 3 tbsp all-purpose flour
  • 2 cups dry red wine
  • 2 cups beef stock
  • 1 bay leaf
  • 3 sprigs fresh thyme

Vegetables:

  • 1 lb cremini mushrooms, halved
  • 12 pearl onions, peeled
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Brown the Beef: In a large Dutch oven, cook the bacon until crispy. Remove bacon, leaving the fat, and brown the beef in batches. Set aside.
  2. Sauté Vegetables: In the same pot, cook onions, carrots, and garlic until softened. Add tomato paste and flour, stir to coat.
  3. Deglaze and Simmer: Pour in red wine and beef stock, add bay leaf and thyme. Return beef and bacon to the pot and simmer for 2 hours.
  4. Add Mushrooms and Onions: In a separate pan, sauté mushrooms and pearl onions in butter and olive oil. Add to the stew and continue cooking until vegetables are tender.
  5. Season and Serve: Adjust seasoning with salt and pepper. Serve hot with crusty bread or over mashed potatoes.

Notes

  • This stew tastes even better the next day as the flavors meld together.
