Instructions

  1. Cook Rigatoni: Bring a large pot of salted water to a boil. Add the rigatoni and cook until just al dente, about 9-11 minutes depending on package instructions. Reserve ½ cup of the pasta cooking water then drain the pasta and set aside.
  2. Sear Steak: Heat olive oil in a large skillet over medium-high heat. Season the cubed steak with salt and black pepper. Sear the steak in two batches to avoid overcrowding the pan, cooking each batch until nicely browned and just cooked through, about 2-3 minutes per batch. Transfer the steak to a plate and keep warm.
  3. Sauté Garlic in Butter: In the same skillet, reduce heat to medium and melt the butter. Add the minced garlic and cook for about 30 seconds, stirring frequently, until fragrant but not browned.
  4. Make Cream Sauce: Pour in the heavy cream, scraping up any browned bits stuck to the skillet bottom for extra flavor. Allow the cream to simmer gently for 2-3 minutes until it starts to thicken slightly.
  5. Add Parmesan Cheese: Lower the heat to low and stir in the freshly grated Parmesan cheese. Continue stirring until the cheese fully melts and the sauce is smooth. Taste and adjust seasoning with salt and pepper as necessary.
