Main Ingredients:
- 250 grams / 8.8 oz cannellini beans (or other small white beans) soaked in water overnight
- 6 tablespoons olive oil extra virgin
- ½ onion minced
- 3 garlic cloves chopped
- 1 carrot cut into very thin slices
- 1 stick of celery finely chopped
- 1 lemon zest + juice
- kosher salt + freshly ground pepper
Optional:
- 500 ml vegetable stock
Instructions
- Preparation: Drain and rinse the soaked beans.
- Sauté: In a large pot, heat olive oil and sauté onion, garlic, carrot, and celery until softened.
- Cook: Add beans, lemon zest, juice, salt, pepper, and vegetable stock (if using). Simmer until beans are tender.
- Blend: Using a blender, puree some of the soup to reach desired consistency.
- Serve: Season with additional salt and pepper if needed. Serve hot with a drizzle of olive oil.
Notes
- You can add more vegetables like spinach or kale for added nutrition.
