Description

  • 1 lb fresh green beans, rinsed, trimmed and halved
  • 3 tablespoons unsalted butter, divided
  • 8 ounces cremini or white mushrooms, sliced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 3 garlic cloves, minced
  • 2 tablespoons flour
  • 1 cup vegetable or chicken broth
  • 1 cup heavy cream

Topping:

  • 2 cups fried onions, divided
  • 1/4 cup panko bread crumbs
  • 1/4 cup parmesan cheese, finely grated

Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Blanch the green beans: In a large pot of boiling salted water, blanch the green beans for 5 minutes. Drain and transfer to a bowl of ice water.
  3. Prepare the mushroom sauce: In a skillet, melt 2 tablespoons of butter. Add mushrooms, salt, and pepper. Cook until mushrooms are browned. Add garlic and cook for 1 minute. Stir in flour and gradually add broth and cream. Cook until thickened.
  4. Combine ingredients: Add green beans to the mushroom sauce. Stir in 1 cup of fried onions. Transfer to a baking dish.
  5. Make the topping: In a bowl, mix panko bread crumbs, parmesan cheese, and remaining fried onions. Sprinkle over the green bean mixture.
  6. Bake: Bake for 25 minutes or until bubbly and golden.

Notes

  • You can use canned green beans if fresh ones are not available.
  • For a healthier version, use low-fat cream or milk instead of heavy cream.
