- 1 lb fresh green beans, rinsed, trimmed and halved
- 3 tablespoons unsalted butter, divided
- 8 ounces cremini or white mushrooms, sliced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
- 3 garlic cloves, minced
- 2 tablespoons flour
- 1 cup vegetable or chicken broth
- 1 cup heavy cream
Topping:
- 2 cups fried onions, divided
- 1/4 cup panko bread crumbs
- 1/4 cup parmesan cheese, finely grated
Instructions
- Preheat the oven: Preheat the oven to 375°F.
- Blanch the green beans: In a large pot of boiling salted water, blanch the green beans for 5 minutes. Drain and transfer to a bowl of ice water.
- Prepare the mushroom sauce: In a skillet, melt 2 tablespoons of butter. Add mushrooms, salt, and pepper. Cook until mushrooms are browned. Add garlic and cook for 1 minute. Stir in flour and gradually add broth and cream. Cook until thickened.
- Combine ingredients: Add green beans to the mushroom sauce. Stir in 1 cup of fried onions. Transfer to a baking dish.
- Make the topping: In a bowl, mix panko bread crumbs, parmesan cheese, and remaining fried onions. Sprinkle over the green bean mixture.
- Bake: Bake for 25 minutes or until bubbly and golden.
Notes
- You can use canned green beans if fresh ones are not available.
- For a healthier version, use low-fat cream or milk instead of heavy cream.
