For the Chicken:
- 1 pound boneless skinless chicken thighs (or breasts)
- Garnish (optional): 2-3 green onions
For the Vietnamese Chicken Marinade:
- 1 1/2 tablespoons lime juice
- 1 1/2 tablespoons neutral or vegetable oil
- 2 tablespoons soy sauce
- 1/2 tablespoon fish sauce
- 2 tablespoons brown sugar
- 2 teaspoons minced garlic
- 1 teaspoon fresh grated ginger
- 1/4 teaspoon red chili flakes
- 1 tablespoon cilantro
Instructions
- Prepare the marinade: In a bowl, combine lime juice, oil, soy sauce, fish sauce, brown sugar, garlic, ginger, red chili flakes, and cilantro.
- Marinate the chicken: Place chicken in a resealable bag or bowl, pour marinade over it, and refrigerate for at least 30 minutes.
- Grill the chicken: Preheat grill to medium-high heat and grill chicken for 6-7 minutes per side or until cooked through.
- Serve: Garnish with green onions and extra cilantro if desired.
Notes
- You can adjust the spice level by adding more or less red chili flakes.
