Description

These Halloween Ghost Linzer Cookies are a spooky twist on the classic Austrian treat. Filled with jam and dusted with powdered sugar, these festive cookies are perfect for Halloween parties or as a fun treat for the family.

For the Cookies:

  • 200 g (2 sticks) unsalted butter, softened
  • 150 g (1 cup plus 1 tablespoon) icing sugar (powdered sugar)
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 300 g (2 cups) plain flour (all-purpose flour)
  • 100 g (3/4 cup) almond meal (ground almonds)
  • 1/2 teaspoon fine salt

To Decorate:

  • raspberry jam, Apricot Jam, or any jam of your choice
  • icing sugar (powdered sugar), for dusting

Instructions

  1. Prepare the Cookie Dough: In a bowl, cream together butter and icing sugar. Add egg yolks and vanilla extract, then mix in flour, almond meal, and salt until a dough forms.
  2. Shape and Chill: Roll out the dough, cut into ghost shapes with a cookie cutter, then chill in the fridge for 30 minutes.
  3. Bake: Place cookies on a baking sheet, bake at 350°F for 10-12 minutes until lightly golden.
  4. Assemble: Spread jam on the bottom of a cookie, top with another cookie, and dust with icing sugar.
