For the Cookies:
- 200 g (2 sticks) unsalted butter, softened
- 150 g (1 cup plus 1 tablespoon) icing sugar (powdered sugar)
- 2 egg yolks
- 1 teaspoon vanilla extract
- 300 g (2 cups) plain flour (all-purpose flour)
- 100 g (3/4 cup) almond meal (ground almonds)
- 1/2 teaspoon fine salt
To Decorate:
- raspberry jam, Apricot Jam, or any jam of your choice
- icing sugar (powdered sugar), for dusting
Instructions
- Prepare the Cookie Dough: In a bowl, cream together butter and icing sugar. Add egg yolks and vanilla extract, then mix in flour, almond meal, and salt until a dough forms.
- Shape and Chill: Roll out the dough, cut into ghost shapes with a cookie cutter, then chill in the fridge for 30 minutes.
- Bake: Place cookies on a baking sheet, bake at 350°F for 10-12 minutes until lightly golden.
- Assemble: Spread jam on the bottom of a cookie, top with another cookie, and dust with icing sugar.
