Sauce:
- 1 medium white onion minced
- 6 large cloves of garlic minced
- 2 tablespoons (30 ml) olive oil
- 3 tablespoons (45 ml) tomato paste
- 1 ½ tablespoons dark brown sugar
- 1 tablespoons (15 ml) balsamic vinegar
- 2 28-oz (1.6 l) cans of crushed tomatoes
- 2 teaspoons Italian seasoning
- 1 teaspoon dried parsley
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- ¼ teaspoon baking soda
- ¼ teaspoon red pepper flakes
- 2 tablespoons parmesan cheese
- ½ cup chopped basil
Spaghetti:
- 1 lb (450 g) spaghetti noodles cooked

Eyeballs:
- 8 oz (225 g) fresh mozzarella ciliegine
- 8–10 large pitted black olives
- 2–3 tablespoons extra virgin olive oil
Instructions
- Prepare the sauce: Saute onion and garlic, add tomato paste, sugar, vinegar, crushed tomatoes, and seasonings. Simmer until flavors meld.
- Cook the spaghetti: Boil noodles until al dente, then drain.
- Make the eyeballs: Cut mozzarella into small balls and place an olive slice on each to resemble an eyeball.
- Assemble: Serve the sauce over cooked spaghetti and top with mozzarella eyeballs. Drizzle with olive oil.
Notes
- You can add additional veggies like bell peppers or mushrooms to the sauce for extra flavor and nutrition.
- For a vegan version, replace the mozzarella eyeballs with marinated tofu cubes.
