- 2 eggs, lightly beaten
- 1/2 cup (113 gr) unsalted butter, melted
- 3/4 cup (180 ml) milk
- 1 tbsp granulated sugar
- 2 cups (250 gr) all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup (100 gr) chopped cooked ham
- 1 cup (100 gr) shredded cheddar cheese
- 1/4 cup (15 gr) finely chopped scallions
Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin pan.
- In a large bowl, mix together the eggs, melted butter, milk, and sugar.
- Add the flour, baking powder, and salt to the wet ingredients and stir until just combined.
- Stir in the ham, cheese, and scallions until evenly distributed.
- Spoon the batter into the prepared muffin pan, filling each cup about 3/4 full.
- Bake for 20-25 minutes or until golden brown and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool slightly before serving. Enjoy!
Notes
- You can customize these muffins by adding other ingredients like diced bell peppers, cooked bacon, or different types of cheese.
