Description

These savory ham and cheese muffins are perfect for a quick breakfast or snack. Packed with chopped ham, shredded cheddar cheese, and scallions, they are flavorful and satisfying.

  • 2 eggs, lightly beaten
  • 1/2 cup (113 gr) unsalted butter, melted
  • 3/4 cup (180 ml) milk
  • 1 tbsp granulated sugar
  • 2 cups (250 gr) all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (100 gr) chopped cooked ham
  • 1 cup (100 gr) shredded cheddar cheese
  • 1/4 cup (15 gr) finely chopped scallions

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin pan.
  2. In a large bowl, mix together the eggs, melted butter, milk, and sugar.
  3. Add the flour, baking powder, and salt to the wet ingredients and stir until just combined.
  4. Stir in the ham, cheese, and scallions until evenly distributed.
  5. Spoon the batter into the prepared muffin pan, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool slightly before serving. Enjoy!
