Main Ingredients:

  • 24 oz salmon cut into 4 portions
  • 2 cloves garlic
  • 2 cup spinach fresh & chopped
  • 1 cup tomatoes cherry, sliced in half
  • ¼ cup sun-dried tomatoes
  • ½ cup parmesan cheese fresh grated
  • 1 tsp salt pink himalayan
  • ½ tsp black pepper ground

Sauce:

  • 1 cup 2% milk
  • 1 tbsp cornstarch
  • 2 tbsp butter
  • 1 tsp olive oil

Optional:

  • 1 serving pasta Barilla protein

Instructions

  1. Prepare Salmon: Season salmon with salt and pepper. In a skillet, cook salmon until browned on both sides. Set aside.
  2. Make Sauce: In the same skillet, sauté garlic. Add milk, cornstarch, butter, and olive oil. Stir until thickened.
  3. Combine Ingredients: Add spinach, tomatoes, sun-dried tomatoes, and parmesan cheese to the sauce. Cook until spinach wilts.
  4. Assemble: Add cooked pasta to the skillet and mix with the sauce. Place salmon on top.
  5. Serve: Garnish with additional parmesan and enjoy!

Notes

  • You can substitute the salmon with another protein like chicken or shrimp.
  • For a lighter version, use low-fat milk and less butter.
