Chicken Mixture
- 1 ½ lbs raw boneless skinless chicken breasts
- 2 large eggs
- 1 tablespoon light mayonnaise
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh chives
- 1 tablespoon chopped fresh basil
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- ¼ teaspoon dried dill weed
- ⅓ cup all-purpose flour
- 4 oz shredded 2% milk Mozzarella cheese (about 1 cup)
For Cooking
- 2 tablespoons olive oil
Instructions
- Prepare the chicken: Place the chicken breasts in the bowl of a food processor and pulse a few times or run for a few seconds until finely diced. If you don’t have a food processor, finely dice the chicken breasts by hand.
- Mix the fritter batter: Transfer the diced chicken to a large bowl. Add eggs, light mayonnaise, chopped parsley, chives, basil, salt, garlic powder, black pepper, dried dill weed, flour, and shredded mozzarella. Stir everything until well combined to form the fritter mixture.
- Portion the mixture: Using a ¼ cup measuring cup, scoop out 15 equal piles of the chicken mixture and set aside.
- Heat the oil: Add 1 tablespoon olive oil to a large sauté pan, skillet, or griddle pan and heat over medium heat until hot.
- Cook first batch of fritters: Add half of the chicken mixture piles to the pan, spacing them so they do not touch. Press down each pile with the back of a spoon or spatula to flatten into patties. Cook for 3-4 minutes until the bottoms are golden brown, then flip and cook the other side for another 3-4 minutes until cooked through. Remove cooked fritters to a serving plate.
- Cook second batch of fritters: Add the remaining tablespoon of olive oil to the pan. Repeat the cooking process with the remaining fritters, which may cook slightly faster. Transfer to the serving plate when done.
- Serve: Serve the fritters warm as a main dish or appetizer.
Notes
- These chicken fritters can be tracked on Weight Watchers; each fritter is 2 WW Points, or two fritters are 3 Points.
- For best results, use fresh herbs for vibrant flavor.
- If you prefer a crispier texture, cook the fritters slightly longer on each side but be careful not to burn them.
