Chicken:

    • 1 whole chicken divided into 8 pieces
    • 1 tbsp kosher salt, divided
    • 1 tsp black pepper, divided

Sauce:

  • 3 tbsp salted butter
  • 1 cup brown mushrooms, halved
  • 3 shallots, diced
  • 2 medium stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 tbsp dried or fresh sage, minced
  • 2 tsp dried or fresh parsley, minced
  • 1/4 cup all-purpose flour
  • 1/2 cup dry white wine
  • 2 cups chicken stock
  • 1/4 cup cream

Instructions

  1. Season Chicken: Season the chicken pieces with half of the kosher salt and black pepper.
  2. Sear Chicken: In a large skillet, sear the chicken pieces until golden brown. Remove and set aside.
  3. Make Sauce: In the same skillet, melt butter and sauté mushrooms, shallots, celery, garlic, sage, and parsley. Stir in flour and cook for a minute.
  4. Deglaze: Pour in white wine and chicken stock, stirring to combine. Add potatoes and return chicken to the skillet.
  5. Roast Chicken: Transfer skillet to the oven and roast until chicken is cooked through and potatoes are tender.
