Chicken:

- 1 whole chicken divided into 8 pieces
- 1 tbsp kosher salt, divided
- 1 tsp black pepper, divided
Sauce:
- 3 tbsp salted butter
- 1 cup brown mushrooms, halved
- 3 shallots, diced
- 2 medium stalks celery, chopped
- 3 cloves garlic, minced
- 1 tbsp dried or fresh sage, minced
- 2 tsp dried or fresh parsley, minced
- 1/4 cup all-purpose flour
- 1/2 cup dry white wine
- 2 cups chicken stock
- 1/4 cup cream
Instructions
- Season Chicken: Season the chicken pieces with half of the kosher salt and black pepper.
- Sear Chicken: In a large skillet, sear the chicken pieces until golden brown. Remove and set aside.
- Make Sauce: In the same skillet, melt butter and sauté mushrooms, shallots, celery, garlic, sage, and parsley. Stir in flour and cook for a minute.
- Deglaze: Pour in white wine and chicken stock, stirring to combine. Add potatoes and return chicken to the skillet.
- Roast Chicken: Transfer skillet to the oven and roast until chicken is cooked through and potatoes are tender.
- Finish with Cream: Stir in cream to finish the sauce, adjust seasoning, and serve hot.
