Chicken:

- 1 whole chicken divided into 8 pieces
- 1 tbsp kosher salt
- 1 tsp black pepper
Sauce:
- 3 tbsp salted butter
- 1 cup brown mushrooms
- 3 shallots
- 2 celery stalks
- 3 cloves garlic
- 1 tbsp sage
- 2 tsp parsley
- 1/4 cup all-purpose flour
- 1/2 cup dry white wine
- 2 cups chicken stock
- 1/4 cup cream
- Season Chicken: Season chicken pieces with half of the salt and pepper.
- Sear Chicken: In a large skillet, sear chicken until golden brown. Remove and set aside.
- Make Sauce: In the same skillet, melt butter and sauté mushrooms, shallots, celery, garlic, sage, and parsley. Stir in flour.
- Deglaze: Pour in white wine and chicken stock. Simmer until thickened.
- Roast: Place chicken and potatoes in a roasting pan. Pour sauce over and roast until chicken is cooked.
- Finish: Stir in cream to the sauce before serving.
