Chicken:

    • 1 whole chicken divided into 8 pieces
    • 1 tbsp kosher salt
    • 1 tsp black pepper

Sauce:

  • 3 tbsp salted butter
  • 1 cup brown mushrooms
  • 3 shallots
  • 2 celery stalks
  • 3 cloves garlic
  • 1 tbsp sage
  • 2 tsp parsley
  • 1/4 cup all-purpose flour
  • 1/2 cup dry white wine
  • 2 cups chicken stock
  • 1/4 cup cream

Instructions

  1. Season Chicken: Season chicken pieces with half of the salt and pepper.
  2. Sear Chicken: In a large skillet, sear chicken until golden brown. Remove and set aside.
  3. Make Sauce: In the same skillet, melt butter and sauté mushrooms, shallots, celery, garlic, sage, and parsley. Stir in flour.
  4. Deglaze: Pour in white wine and chicken stock. Simmer until thickened.
  5. Roast: Place chicken and potatoes in a roasting pan. Pour sauce over and roast until chicken is cooked.
  6. Finish: Stir in cream to the sauce before serving.

  • You can customize the herbs in the sauce to suit your preference.
  • For a richer sauce, you can add more cream or butter at the end.
