Soup:

  • 1 tablespoons butter
  • 1 large yellow onion, diced
  • 2 large carrots, peeled and diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour (or gluten-free flour)
  • 1/2 teaspoon smoked paprika
  • 3 cups vegetable broth (I like the not-chicken style)
  • 4 cups chopped broccoli
  • 2 cups 1% milk
  • 4 oz cheddar cheese, shredded (about 1 cup)
  • 1 cup low fat cottage cheese, blended
  • Salt & pepper to taste

Instructions

  1. Saute Vegetables: In a large pot, melt butter over medium heat. Add onion, carrots, celery, and garlic. Cook until vegetables are tender.
  2. Add Flour & Spices: Sprinkle flour and paprika over the vegetables. Stir and cook for a minute.
  3. Add Broth & Broccoli: Pour in vegetable broth and add chopped broccoli. Simmer until broccoli is tender.
  4. Blend & Add Cheese: Blend cottage cheese until smooth. Stir in milk, blended cottage cheese, and shredded cheddar. Cook until cheese is melted and soup is creamy.
  5. Season & Serve: Season with salt and pepper. Serve hot and enjoy!

Notes

  • You can blend the soup for a smoother consistency, if desired.
  • This soup can be stored in the fridge for a few days and reheated when ready to serve.
