Soup:
- 1 tablespoons butter
- 1 large yellow onion, diced
- 2 large carrots, peeled and diced
- 1 stalk celery, diced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour (or gluten-free flour)
- 1/2 teaspoon smoked paprika
- 3 cups vegetable broth (I like the not-chicken style)
- 4 cups chopped broccoli
- 2 cups 1% milk
- 4 oz cheddar cheese, shredded (about 1 cup)
- 1 cup low fat cottage cheese, blended
- Salt & pepper to taste
Instructions
- Saute Vegetables: In a large pot, melt butter over medium heat. Add onion, carrots, celery, and garlic. Cook until vegetables are tender.
- Add Flour & Spices: Sprinkle flour and paprika over the vegetables. Stir and cook for a minute.
- Add Broth & Broccoli: Pour in vegetable broth and add chopped broccoli. Simmer until broccoli is tender.
- Blend & Add Cheese: Blend cottage cheese until smooth. Stir in milk, blended cottage cheese, and shredded cheddar. Cook until cheese is melted and soup is creamy.
- Season & Serve: Season with salt and pepper. Serve hot and enjoy!

- You can blend the soup for a smoother consistency, if desired.
- This soup can be stored in the fridge for a few days and reheated when ready to serve.
