Description

This hearty Hobo Casserole Ground Beef Recipe features layers of seasoned ground beef, thinly sliced potatoes, and melted cheddar and Parmesan cheese baked to golden perfection. It’s a comforting and flavorful oven-baked casserole perfect for an easy family dinner.

Ingredients

Scale

Beef Mixture

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Potatoes and Seasonings

  • 45 medium potatoes, thinly sliced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Cheese and Liquids

  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup beef broth or water
  • 1/4 cup milk (optional, for creaminess)

Garnish

  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat and prepare dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with cooking spray or olive oil to prevent sticking.
  2. Cook the ground beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef, breaking it apart with a spoon, and cook until browned and fully cooked through, about 5-7 minutes. Drain excess fat as needed.
  3. Sauté onion and garlic: Add the chopped onion and minced garlic to the skillet with the beef. Cook for an additional 3-4 minutes until the onion becomes soft and translucent, blending flavors with the beef.
  4. Layer potatoes and season: Spread the cooked beef mixture evenly in the bottom of the prepared baking dish. Arrange the thinly sliced potatoes on top, then season the potatoes with salt, pepper, Italian seasoning, and paprika evenly.
  5. Add cheese and liquids: Sprinkle shredded cheddar and grated Parmesan cheese over the beef and potatoes. Pour beef broth or water around the edges of the casserole to keep potatoes moist during baking. Optionally, drizzle milk over the top for extra creaminess.
  6. Bake covered: Cover the casserole with aluminum foil and bake for 30 minutes, allowing the potatoes to soften and flavors to meld.
  7. Bake uncovered: Remove the foil and bake for another 15-20 minutes until the potatoes are tender, and the cheese is bubbly and golden brown.
  8. Garnish and serve: Garnish with fresh parsley if desired and serve the casserole hot for a comforting meal.

Notes

  • Use a mandoline slicer for uniformly thin potato slices for even cooking.
  • You can substitute cheddar with other melting cheeses like Monterey Jack or mozzarella if preferred.
  • For a richer casserole, add the optional milk, otherwise omit for a lighter dish.
  • Let the casserole rest for 5 minutes after baking to set before serving.
  • This recipe can be doubled easily for larger gatherings using a bigger baking dish.
